cmc,
Are you looking at changes in these factors in a local area (e.g. your hometown) or in a larger area (e.g. the United States)? If you are looking at a local area, the National Weather Service maintains an on-line database of past weather data. If you are planning a small-scale study, this information may be of use to you. If you are planning to track the climate over a large area, it will be much more complicated.
Let me know what the scale of your intended project is and what sorts of questions you are trying to answer and I will be able to provide more help to you.
This sounds like a great project!

cmc, If you are interested in working with data from the western US, this site will probably be helpful in addition to the sources that Terik mentioned:

hey cmc i think i might be able to offer an idea for youi am looking at doing my project form a river drainage near my home town...i am yet to make a hypothesis but i am looking at the snowpack change, precipitation change, and weather (temp) change in the last couple of decades.
why dont you do a scatter plot data study of all the recorded stats based on precipitation, rivers, rainfall etc and estimate the amount of how much it has gotten worse. you can also predict some future statistics of how much rain will increase of how high water levels will rise of fall based on stats from the past
I hope this helps and good luck with your project
