Help! Juice Balls: Spherification

Post by deleted-672564 »

I chose this experiment for science fair. I have run the experiment several times but I cannot get it to work. I add exactly the right amounts of calcium chloride to the bath and sodium alginate to the juice. I use a blender for the sodium alginate solution. I'm testing different juices - lemon, grape, apple, grapefruit, cranberry. I tried coke. I've looked at other suggestions and tried reverse spherification. I've made both solutions and let them sit overnight. The best results have been wormy juice strands. What am I doing wrong? Science Fair is in 3 weeks!  :?
