How to find the Mass / concentration of sugars in sample of watermelon juice.

Post by deleted-689767 »

I'm a year 12 student in Australia and i would like to know the way in which i can isolate or determine the sugars in a sample of watermelon juice, and if possible if i can seperate or determine the mass of the different sugars: Glucose, fructose and sucrose in the juice sample.

Hi Captivate,

There is a project on the Science Buddies site with the objective of finding the glucose and sucrose contents of foods:

https://www.sciencebuddies.org/science- ... metabolism

Test strips are used to determine the glucose concentration in a food sample. Next, an enzyme is used to convert any sucrose in the sample to glucose and fructose. Glucose concentration in the enzyme treated sample is measured with a test strip. Sucrose concentration is deduced from the glucose measurements before and after enzyme treatment.

The experiment does not include measurement of fructose. But test strips are available for fructose measurement. And fructose testing could be added to the experiment very easily.

I hope this helps. Please ask again if you have more questions.
