Celiac Disease Science Fair Project

Hello,

I am a senior in high school, and I am currently brainstorming ideas for a future celiac disease based science fair project. I know that Omega-3's are frequently used as an anti-inflammatory in other disease's like crohns. Because Celiac disease also involves inflammation of the intestinal track, I possibly wanted to test the effect that an omega-3 supplement like fish oil has on the body's inflammatory process.

I know that it is not possible for me to test this on humans, so my question is: is there a way to either recreat or mimic the body's intestinal inflammation without using either human or animal subjects. I have done some research in to Caco-2 cells, but I am still unsure.

This is a very complex and sophisticated question. Using human cell lines such as Caco-2 cells would require equipment such as a cell culture hood and incubator. Unless you have access to those, I would suggest you take a different approach or choose a slightly different project.
