From Google, a company called Prism Medical sells Glutathione at:

In general an assay is a measurement of the quantity of a substance in a medium. So an Antioxidant assay would be a measurement of the active antioxidants in a given substance, like Glutathione.
Hope this helps,

Antioxidant Assay Kits-

Organisms possess several antioxidant systems, enzymatic and non-enzymatic, that are very important for the prevention of oxidative stress. Lipid soluble (most importantly vitamin E) and water-soluble (uric acid, vitamin C, bilirubin, thiols and gluthathione) antioxidants are involved in these processes. Given the multiplicity of antioxidant pathways, their centrality in the prevention of oxidant stress, and the influences of lifestyle and nutritional supplements on an individual’s antioxidant capacity, it is important to be able to quantitatively measure the total antioxidant capacity or antioxidant power within bio-logical specimens. Although a number of assays purporting to measure total antioxidant power have been reported, most of these have significant limitations. For example, the ferric reducing ability of plasma (FRAP) assay (1) is primarily responsive to uric acid (1) but has very poor reactivity for thiols so it does not adequently measure the antioxidant activity of key molecules such as glutathione and albumin (1,2). In contrast, the method described below provides a quantitive response to all major antioxidants (3,4)
