I would reccomend researching the nature of Ccarobon dioxide, anf the Gas Laws (Charles' Law, Boyle's Law). This should give you a good idea of how the CO2 will act. You may also look into the volume of the CO2 at atmospheric pressure.
Vinegar has a chemical composition of C2H4O2, which is suspended in H2O. Baking soda has a chemical composition fo NaHCO3. These two compounds react when they are mixed togewther to procude CO2. CO2 gas is note very dense, so it causes the exapnsion that you are talking about, because this reaction is converting to dense materials into a less dense material. Therefore, more room is needed to hold the same amount of matter. This reaction is an acid-base reaction. Baking soda is very basic, while vinegar is rather acidic. A similair reaction occurs while making bread. Baking soda is mixed with a mild acid, and CO2 bubbles are formed, which make the bread light and fluffy.
