Fruit ripening experiment

I am starting an experiment on how different packages affect how fruit ripens. I want ot measure the ripeness of fruits using their total soluble solids percentage and titratable acidity after leaving them for a week in different packages.
I'm not sure about which climacteric fruit to use (maybe mango?) and what sort of packages I should use to get good results (I had thought of plastic and paper bags that either have holes or not). Can someone help me please?!

Hi Caro, if you do a Google search you will find quite a few experiments on fruit ripening. This project is on the Science Buddies website as well.
