There's no reason to think they'd last any longer or less long than the juice they were made from if you refrigerate them. I'd think at least a couple of weeks in the fridge for most juice.

They're sold commercially as 'Bobas' and the commercial ones are pasteurized and last for months. Since you worked with the ingredients in open air, I would just treat them as you would juice.
