One possible independent variable is the salt concentration needed to make electricity flow. The dependent variable would then be the light turning on/off or the motor rotating.

This project seems to be mostly a demonstration.

Other possible variables:

The amount of material that still makes electrical contact.
How dry/old can it be and still make electrical contact.
