Fair Test and Variables

Im sorry im posting a lot, but i really need some help understanding some stuff.

My assignment states
what is a fair test?
well designed scientific investigations study factors which could affect the results. These factors are called variables.

I am doing my assignment and i have to include a variable. Im testing amounts of vitamin C in fruits. So if i want a variable so it mean i have to say find the amounts of vitamin C then find the difference if i add for example... sugar to the fruit juice. Or is there already a variable in the experiment, just that im not controlling it?

Looking at your overall project, if you provide "Which fruits contain the most vitamin C?" to answers.com, you'll get a wealth of web resources. I would steer clear of "sponsored" results, as well as one site that seems to promise results for $10.
