Help: effects of Polyphenols on Protein Aggregation for Alzheimers

Hi, I am working on a project for a regional science fair. (Goal is to go to a top-level competition, such as ISEF or JSHS). My topic Investigates the effects of certain Polyphenols on Protein Aggregation (LLPS) for Alzheimers. I'm planning on using split green peas as my environment. Is this something thats doable and high-level?
