In fact, the color of text makes a big difference in how fast it can be read. Even more important is the combination of a particular foreground color and background color. Consider how difficult it is to read this or this or this, for example.

Personally, I'm not enough of an expert to be interviewed, but you can find some useful information in the url's. Maybe one of the researchers or designers there could help you.
