I've been searching through the web sites pointed to by earlier post on "Search Sites" in the "Science Buddies -> Physical Science and Math" forum.
So far, I haven't found a match that answers your question of lemon and gums.
The best I could find was:

There are several sites, however, that address lemon and teeth.
One was a complete science project! Please see:

I haven't been able to find a site that addresses lemon and gums. You might have better luck.
