anaerobic/aerobic yeast growth
I am considering the project "Yeast Metabolism with and without aeration". I understand how to perform the experiment, but I am having trouble discerning WHY this is important. What are the 'real world' applications? Thank you. ?

So you are trying to understand the difference and importance of aerobic vs. anaerobic metabolism. I looked up your referenced project writeup:

And looked at the bibliography, so I can understand your frustration, as the first two of the three reference links appear broken. The third link does work and seems to me informative:

As far as the big picture goes, anaerobic yeast metabolism is hugely important - think fermentation of wine, beer, making bread, making liquor, etc. Yeast grows better aerobically as it can get more energy out of the sugars it is eating.
