I've never tried squeezing juice out of a banana before, but if your unripe banana won't yield juice, I'd say to find one that's slightly more ripe and try again.

Hi Henry!

Here's a video that explains why fruits turn brown when you cut them, which is related to your project. If your unripe bananas are not producing any juice, you may want to change your experiment slightly and test the varying sugar concentrations in ripe and "stale" or "bad" bananas that have turned brown after being exposed to air, rather than testing sugar concentrations in unripe and ripe bananas.
