Bromelain enzyme in digestion of milk protein

Hello,

For my science project, I'm doing an experiment on the effect of different temperature on the activity of an enzyme bromelain extracted from a pineapple in breaking down the milk protein.
And my question is, how long do I need to put the enzyme into the water bath in order for the temperature to have an effect? And How long do I wait for enzymes to digest the proteins in the milk?
