I'm writing a lab on amylase.
I need to know how it functions and what exactly happens when I denature it with heat.

Hi take-ahike,

A good introduction to amylase can be found on its wikipedia page, http://en.wikipedia.org/wiki/Amylase

Information about denaturing amylase can be found at:
http://www.associatedcontent.com/articl ... html?cat=5 and
http://www.allsands.com/science/amylase ... wpp_gn.htm
Cheers!
