Apple Oxidation
I am doing a project involving different ingredients and their effect on apple oxidation. How should I quantitively measure this oxidation?

Hi and welcome to Scibuddies,
I can give you some help that hopefully will allow you to measure apple oxidation (browning) quantitatively. The key to this is using a smart phone camera to obtain timed images under controlled lighting conditions. Here's a published paper that talks about this procedure--just ignore the non-useful scientific details and get the principles of how the experiment is done: https://academic.oup.com/fqs/article/1/3/221/4082082
How I would convert the image density to a number value is to use free software called ImageJ: https://imagej.nih.gov/ij/download.html
It takes some work to learn how to use this program but it is useful for a lot of experiments where you need to quantitate and compare images. We use it in the lab frequently.
If you have questions, post again. There's a lot of info on image density reading on the web, so you shouldn't have any problem. Just make sure you take the images the same way every time with the same lighting, camera, position, etc.
