I'm not sure this is an appropriate science fair project (and we don't really help with homework questions). Tanning is discouraged by most health authorities due to the link to skin cancer. You cannot really test on people due to the danger.

There is some information about the chemical changes that occur when you tan in the wikipedia:

Searching for information on tanning is tricky; the process of making leather is also called tanning, so you need to look carefully at several pages after you perform a search.
