There are several projects involving yeast fermentation in "Science Fair Project Ideas" under Life Science/Microbiology. You might want to start reading here. I wasn't able to determine what your question is from your post. You could go in many different directions so you need to first determine exactly what it is you want to ask. If you manipulate something, what, based on research, do you expect to happen as a result of that manipulation? Hope this helps.

It sounds like you are just getting started with your project, so this is a good time to do the background work that will ensure a successful science project. Microbiology is the study of microorganisms, and yeasts are one type of microorganism. First, I recommend that you read through the information on the science buddies website for doing a science fair project.
