Effect of pH on pectinase
I am doing an experiment on the effect of pH on pectinase and I wasn't sure how to change the pH correctly. Do I need to use a buffer or, for example, can I just add hydrochloric acid to the pectinase solution?

I've heard of kids doing this experiment by adding things like HCl, vinegar, and even bleach! If you had any hesitations using HCl, brush them off! I think it's fine to use that, so long as you're careful, of course. If you want, there's no harm in trying the buffer and seeing if anything happens; how would the results compare to, say, what you hypothesized? It'd be interesting to find out! Have fun and good luck!
