My son asked me a question that I have been unable to find an answer for. The question is as follows:
Can you make rock candy by starting with cool sugar water, 60°. Or does the water have to be warm or hot when you insert the stick with the seed crystals for the crystallization process to start?
Does anyone know the answer to this?

I am not sure but I think to make rock candy it is preferred to use hot water because it helps the sugar dissolve faster so this speeds up the proccess

The sugar water was prepared hot and then allowed to cool. So far no crystals. I’m wondering if you have to start with hot water, or if we missed something.
